Hey Ladies! This week was the finale of The Bachelorette, and while I never used to watch those shows, I got sucked into them after moving to St. Louis. The drama is just TOO MUCH I can’t turn away! But really, the reason I’ve gotten so hooked is because the shows are such a fun time to hang out with girlfriends, even if you are just texting your commentary while watching.
So, Tuesday (I’m an Apple TV girl- no live TV for me!) I had a couple friends over for dinner and a viewing. We all of course had seen a glimpse on social media of who received the final rose, but we were able to avoid the full story, so we still wanted to see how it played out! I thought I’d share this meal plan with you because it was perfect finger food for us to enjoy while taking in the show!
Avocado Chicken Salad Sandwiches
This was the star of our meal. I made this chicken salad early in the day and let it sit in the fridge until my guests arrived. I served it with honey wheat Hawaiian rolls, provolone cheese, tomato, and green leaf lettuce. Honestly, this would be perfect for a bridal or baby shower luncheon if you are planning one!
-4-6 Organic Boneless/Skinless Chicken Breasts, cooked & shredded
-2 Small Ripe Avocados
-1/2 Sweet Onion, finely chopped
-Handful of chopped Cilantro, to your own preference
-Juice of 1 lime
-Kosher Salt, to your taste
-1/4 cup Mayonnaise (I used a little to give it a smoother texture and an extra kick- but not necessary to keep it as healthy as possible!)
-Chile Powder, to your taste (I used just a couple dashes)
-Curry Powder, to your taste (I used around a teaspoon, and we loved that extra flavor!)
-Shred cooked organic chicken breast and place in a bowl
-Add Avocado to the bowl and begin to mash around with the chicken
-Add chopped onions and cilantro, mashing these ingredients into the chicken and avocado
-Squeeze lime juice and sprinkle kosher salt and mash all ingredients together, mixing all flavors well
-Taste to make sure it’s the flavor you’re going for- add extras as you wish!
On the Side:
I served carrots, cherry tomatoes, and peppers with hummus, plus a grass-fed cheddar cheese and aged gouda cheese with grapes. All no work to prepare and easy to eat in front of the TV!
I melted some semi-sweet chocolate chips and dipped strawberries. I let them sit in the fridge for about 2 hours to make sure they were chilled and the chocolate was hard before serving. YUMMY!!
